There are so many different green colors this late in summer. If you’re lucky, you’ll still find snatches of bright orange and red. I didn’t tend garden this year and have lost most of my color to green weeds!
Here’s some great color in two of my fave pillows. Both photos began in the garden as plant and flower- hosta and rose. Proof positive that you don’t have to tend garden to enjoy a garden inside your home. (I realize one doesn’t usually show decorative pillows from the zippered side but I’m proud of the color- matched invisible zippers. This is difficult to do as the photo images wrap the pillows and colors change along the zipper path- making line-up tricky.) Beet Salad with Fresh Local Tomatoes
Prepare ahead:
Steam until tender then cool:
2-3 large beets– peeled and sliced
Slice and chop:
1 med. sweet white onion, sliced into half-moons
2 large tomatoes– chopped
1 handful fresh basil, chopped
1 tsp. dried dill
1 tsp. salt
1/4 cup olive oil
1/4 cup red wine vinegar
Mix all ingredients together, marinate for 1 hour and chill, and serve.
